Salsa, again at Herb’n Renewal!

A visit to your favorite farmers market will get ya just about everything that you need for this delicious salsa! I know that our market, the Bluegrass Farmers’ Market in Lexington, Kentucky, is loaded with farm fresh goodness this time of the year. The only thing I need to buy at the grocery would be the canned beans and the lime juice…that makes this salsa a real market treat!

 COWBOY CORN’N BLACK BEAN SALSA

 

1 15 OZ. CAN BLACK BEANS, RINSED & DRAINED

2 CUPS FRESH CORN CUT OFF COB OR FROZEN (THAWED)

2 CUPS TOMATOES, DICED OR 14.5 OZ CAN PETITE DICED

1/2 CUP GREEN PEPPER, DICED

1/2 CUP ONION, DICED

1 CUP ZUCCHINI, DICED

1 TBSP. HERB’N COWBOY SEASONING

2 TBSP. LIME JUICE

 

MIX ALL INGREDIENTS WELL AND LET SIT IN FRIDGE UNTIL WELL CHILLED. SERVE WITH TORTILLA CHIPS. MAKES 1 1/2 QUARTS.
